Our History.
The pasta factory Caponi was founded 1953 as a little shop
of fresh egg-pasta. The first transformation occurs in the
sixties, when the little shop moves into larger rooms and
becomes a workshop for fresh egg-pasta and dried pasta which
were sold separately to the public or in wholesale to stores
and restaurants. At that time the man who's writing this
lines, Roberto Caponi, helped his father Piero Caponi (the
one that had founded the business) and learned from him
the art of creating pasta. We then sold our fresh and our
dried products (tagliatelle, lasagne, tortellini etc.) in
the province of Pisa and in some more provinces from Tuscany.
But the decisive change overcomes in the eighties when Piero
Caponi retires and passes the reins of the firm to the author.
After 30 years of good working I decided to realize an idea
that I had dreamed for a long time: cancel the retail sail,
stop the production of fresh egg-pasta and stuffed pasta,
make more perfect some existing products and create new
ones with the characteristics and the quality that our products
were used to have thanks to a production stroke nearly completely
manual, with environment temperatures during the elaboration
and low temperatures during the drying time. In poor words:
make get perfect to the maximum our products and dedicate
them to specific clients: gourmets and lovers of higher
gastronomy. It was neither easy nor simple, but the fundaments
were very good and CASA CAPONI grew and confirmed itself
on national and international scene. The consideration of
the mark CASA CAPONI grew a lot, but not so the production,
which on the contrary diminished because of the difficulties
deriving of the continuous desire to better us and to improve
as if we were in competition against ourselves: only five
persons, owners included, are able to produce circa 170
kg pasta a day, which decreases to 120 kg in the media because
the same people pack the pasta and prepare the sending.
That's the explanation of why the products CAPONI have an
extraordinary quality and also a memorable price. Our steamers
seem to have understood all this and seem to have received
very well our cookery message, to judge from the great consideration
for our work. We like to thank them for this and we want
to assure them that we will try, if it's possible, to improve
ourselves and that we'll always be careful that our products
will be worthy of CASA CAPONI.
